Also, a lot depends on what kind of tofu you used. Extra-firm is best for stir fries and if it's watery when you take it out of the package it's best to slice it in two and pat the extra moisture away with towels. If water still comes out when you squeeze the tofu, let it drain on the towel for about 20 minutes before you cook it. Eggplant also will turn mushy if the heat isn't high enough. You want the heat high enough to sear off the outside of the tofu or vegetable. It ws still pretty good. Partway though I remembered I had holy basil growing under my tomatoe plants so I threw a few leaves in along with some slices of ginger. These stuff much easier into the chile as they are the right shape.<BR/>2) If you separate the eggs and beat the whites first, it is quicker. I bought mine at Trader Joe's, they don't have an organic version, but for some reason I feel better about getting it there than at Fred Meyer. If you want to go organic at a lower cost, you could buy an organic pork Roast, which just takes longer because it's a bigger cut, or organic pork chops. You could make the sauce then quickly brown the chops in a pan. I think it would be almost as good that way.<BR/><BR/>and YES, that is a Chile Relleno in my profile pic. Those were made with chiles from the farmer's market this summer, but I will happily get the ingredients for that in the next few weeks and post the recipe. The tomato sauce has ingredients you wouldn't expect, like cinnamon and cloves.
